1 cup white rice
2 tablespoons
olive oil
3 tablespoons fresh basil; parsley, or mix
1½ cups mozzarella; grated
2 tablespoons parmesan; grated

1 Cook rice and empty it into large bowl and stir in olive oil and herbs.
2 Stir mozzarella into hot rice--it must melt.
3 Sprinkle parmesan over top
4 Serve immediately.
