Crab Epicurian

Take...

1 c. crab meat, fresh cooked or canned (6 1/2 oz.)
2 tbsp. chives, finely chopped
1 c. mushrooms, sliced
1/4 tsp. thyme
2 tbsp. onion, chopped
3 tbsp. butter
1 c. cream
1 egg yolk, slightly beaten
1/2 c. bread crumbs
1/2 c. buttered crumbs

then...

1 Melt the butter in a large frying pan and add onion and mushrooms. Cook over low heat about 5 minutes.

2 Add crab meat, bread crumbs, chives and seasonings.

3 Combine cream and egg yolk. Stir into crab-meat mixture.

4 Turn into crab shells, ramekins or scallop shells.

5 Top with buttered crumbs and a dash of paprika.

6 Bake in a moderate oven (375 degrees) 20-25 minutes or until browned. Makes about 4 servings.
