Baked Red Snapper with Coriander

Take...

1 ca. 4lb red snapper
1 cup fresh coriander, chopped
1 cup chopped green onions
½ cup lemon juice
8 cloves garlic, crushed
2 teaspoons paprika
Salt and pepper to taste
Pinch of cayenne
4 medium tomatoes, sliced
3 medium potatoes, sliced
2 medium carrots, sliced
¼ cup olive oil
1 cup water

then...

1.  Preheat the oven to 375 degrees (190 C).

2.  In a large bowl, mix the coriander, green onions, lemon juice, garlic, paprika, salt, pepper, and cayenne and stuff half of the mixture into the fish and secure with toothpicks. 

3 Place the fish in a baking dish and spread the remaining mixture over top. Place on top the tomatoes, potatoes, and carrots.  Drizzle with the oil, then add the water.

4.  Cover the pan and bake until done (about 45 minutes).  Remove from the oven and let stand in the cooking liquid for 15 minutes.  Serve warm or cold.  Garnish with lemon slices and parsley sprigs.
