Herbed Feta and Oregano Salad
Take...
lb. (225g)
feta cheese
2 tablespoonfuls (30ml) plain yoghurt
2 tablespoonfuls (30ml)
extra virgin olive oil
2 cloves garlic, crushed
1 handful fresh oregano leaves, roughly chopped
1
butterhead lettuce, (or as many leaves as you require if it's from the garden)
2 ripe tomatoes
1 medium cucumber, sliced
8 black olives
Sprigs of oregano and parsley as garnish
then...
1 Combine the yoghurt, olive oil, garlic and oregano and crumble in the feta. Mix together gently with a fork
2 Arrange the lettuce leaves on each of four salad plates an
d add a mound of the mixture, garnished with tomato wedges, cucumb
er slices, olives and herb sprigs
