Vegetarian Lasagne

Take...

2 cups cooked, drained spinach, finely chopped
28 oz. can of tomatoes
1 medium onion, diced
4 cloves garlic, crushed
1 medium green pepper, diced
2-3 tablespoons. olive oil
2 tsp. fresh oregano, finely chopped
1 tsp fresh basil, finely chopped
½ tsp. ground chillies
1 package lasagne noodles
2 cups grated mozzarella cheese & 1/4 cup grated Parmesan cheese, mixed together
A sprikle of extra Parmesan
A sprinkle of dried oregano
then...

1 Over medium heat, saute onion, pepper and garlic in olive oil.

2 Add tomatoes, stir and simmer for 10 minutes, then stir in basil, oregano and chillies. Simmer for a furthe 6 to 8 minutes minutes. Taste, season and remove from heat.

3 In a greased 9x13 inch casserole dish, spread a thin layer of sauce. Place a layer of noodles, and cover with a thin layer of sauce, 1/3 of the chopped spinach, and sprinkle with about 1/4 cup of the cheese mixture.

4 Repeat process ending with a generous layer of sauce, cheese and a sprinkle of dried oregano.

5 Bake at 350 degrees for about 45 minutes, wrapped tightly in foil. .

6 Uncover, sprinkle on a little Parmesan while piping hot; turn off oven

7 Remove from oven when top is golden (should take about 5 to 10 minutes)and let rest for 15 minutes.
