Chicken Thighs in Madeira Sauce

Take...

4 Chicken Thighs
2 tablespoonfuls plain flour
1 tablespoon fresh sage, finely chopped
¼ cup butter
2 teaspoons peanut oil
1 cup button mushrooms
1 cup Madeira wine
½ teaspoon fresh herbs (I suggest oregano, thyme, marjoram)
seasoning to taste (you shouldn't need too much!)

then...



1 Mix together the flour and sage and sprinkle over the chicken

2 Brown the chicken in half of the butter and cooking oil. Place in casserole.

3 Cook mushrooms in the remaining cooking oil and butter

4 Add to the casserole with the wine, extra herbs and seasoning. Cover

5 Cook in 350 °F (180 °C) oven for about one hour 15 minutes

Serves 4
