1 small bunch, thyme
3 sage leaves
6 tablespoonful
extra virgin olive oil
2 garlic cloves, crushed ¼ to ½ teaspoonful paprika
the juice of a lemon
salt and freshly ground pepper to taste

1 Preheat oven to 350°F, 180°C, gas 4
2 Combine the herbs, lemon juice, olive oil, garlic, and add paprika, pepper and salt to taste
3 Use this mixture to marinate the chicken for 3 hours; better still, overnight
4 Cook for 1½ hours using the marinade to baste
