Baked Trout with Fresh Herbs
Take...
1 kg Coral trout (whole)
3 Spring onions (chopped)
1 sprig Thyme
3 tbspns Olive oil
200 ml Dry white wine
2 sprigs Fennel (chopped)
1 tbspn parsley (chopped)
Salt and pepper to taste
then...
1 Scale, gill and gut the coral trout, salt and pepper inside and out
2 Insert sprig of thyme into the stomach cavity and place fish in well greased baking dish
3 Pour over oil and sprinkle with chopped spring onions
4 Cook for 15 minutes in oven pre-heated to 200C
Slide baking dish out of even long enough to pour over wine an sprinkle with the fennel and parsley
6 Cook for another 15 – 20 minutes before serving the whole fish on a plate garnished with lemon slices
