Crispy Mustard Chicken

Take...


4 (4 oz.) skinned boned chicken breast halves
2 tbsp. reduced calorie mayonnaise
2 tbsp. American mustard
1/4 c. wheat germ
1/3 c. fine dry bread crumbs
1/2 tsp. dried thyme
Salt to taste (I don't use any)
Vegetable cooking spray

then...

1 Combine mayonnaise and mustard in a small bowl; stir well.
2 Combine wheat germ and breadcrumbs and thyme in a shallow bowl.
3 Brush each chicken breast with mustard mixture, dredge in breadcrumb mixture.
4 Place chicken in a 10 x 6 x 2 inch baking dish that has been coated with cooking spray. Cover and bake at 350 ° F for 40 minutes.
5 Uncover and bake an additional 20 minutes or until chicken is tender.
