Current uses

Olive oil, from the tree Olea Europea, is a monosaturated fatty acid, therefore does not have the same cholesterol-raising effect of saturated fats.It is also a good source of antioxidants.

Olive oil, unlike some seed oils, remains stable in its chemical structure at relatively high temperatures because of its antioxidant and high oleic acid content.

Olive oil is still being used for medical purposes and has been accepted to be an essential ingredient of a healthy diet It is said to be particularly effect against hard to treat illnesses such as Chronic Fatigue Syndrome, Epstein-Barr Disease and herpes. Olea europea is also effective in lowering high blood pressure and reducing cholesterol levels. As a powerful anti-fungal, it also fights yeast infections and can reduce candida overgrowth in the system, one of the major causes of fatigue.
